Is the color of the Extra Virgin Olive Oils important?

Contrary to popular belief, the color of the extra virgin oil does not stand for its quality.

However, it do can give us a hint about the olive’s maturation degree when the oil was extracted. When the olive is younger, it has more chlorophyll and pheophytins wich provide a more intense green color, like ours. As the oilve rippens, the carotenes and xanthopylls responsible of giving them a more yellow color increase.

It is worth highlighting that the oil’s green color decreases over time due to the degradation of the chlorophyill. However, it does not mean that it is losing its properties.
